Fluffy and drool-worthy protein pancakes using XTEND PRO's Cookie Butter flavor. Top them with dark chocolate chips and a drizzle of caramel sauce for a sinfully delicious stack of pancakes!



  • 2/3 cup oats (quick or old fashioned)
  • 1 scoop XTEND PRO Cookie Butter powder
  • 1 whole egg
  • 1/4 cup milk (I used unsweetened almond)
  • 1/2 tsp baking powder
  • Pinch of salt
  • Cinnamon to taste
  • 1/2 tbsp dark chocolate chips


  • 1/2 tbsp caramel sauce (sugar free or regular)
  • 1/2 tbsp dark chocolate chips


  1. Preheat a pan or griddle to medium/high heat. 
  2. Add all pancake ingredients except for chocolate chips to a blender or food processor.
  3. Blend until a smooth batter forms, but be careful not to over blend or whip the batter.
  4. Add chocolate chips.
  5. Spray pan with nonstick spray. Spoon batter onto pan to make 4 medium-sized pancakes.
  6. Cook for a couple minutes per side.
  7. Once cooked, top pancakes with a drizzle of caramel sauce (sugar free or regular) and a sprinkle of more chocolate chips. Enjoy!
